This No-Bake Watermelon Tart may look like a giant slice of watermelon, but there’s a delicious surprise underneath! A green cookie crust, smooth vanilla cream cheese filling, and refreshing fresh watermelon topping create a fun summer dessert that’s almost too pretty to cut. Tiny dark chocolate “seeds” complete the watermelon look.
With no oven required, it’s a perfect make-ahead dessert for summer parties, BBQs, birthdays, and family gatherings.
Ingredients
For the Green Cookie Crust
- 2 1/2 cups (250 g) finely crushed plain cookies or graham crackers
- 14 tablespoons (200 g) unsalted butter, melted
- green gel food coloring, as needed
For the Vanilla Cream Filling
- 2/3 cup (150 ml) cold heavy whipping cream
- 1/3 cup + 1 tablespoon (100 ml) cold whole milk
- 1 package instant vanilla pudding mix
- 1/4 cup (30 g) powdered sugar
- 3.5 oz (100 g) cream cheese, softened
For the Watermelon Topping
- 2 cups + 2 tablespoons (500 ml) fresh watermelon juice, strained
- 2 tablespoons powdered sugar
- 1 packet (about 7 g / 2 1/4 teaspoons) unflavored powdered gelatin
- 3 tablespoons + 1 teaspoon (50 ml) cold water
For the Chocolate Seeds
- dark chocolate, as needed

Instructions
1. Make the Green Cookie Crust
Add the finely crushed cookies to a large mixing bowl and pour in the melted butter.
Add a small amount of green gel food coloring and mix thoroughly until the crumbs are evenly colored. Add a little more coloring if necessary until you reach a watermelon-rind green.
Press the mixture firmly into the bottom and up the sides of an 11-inch (28 cm) tart pan with a removable bottom.
Refrigerate the crust while you prepare the filling.
2. Make the Vanilla Cream Filling
Add the cold heavy whipping cream, cold milk, and instant vanilla pudding mix to a mixing bowl.
Beat with an electric mixer until the mixture thickens.
Add the powdered sugar and softened cream cheese. Beat briefly, just until smooth and evenly combined.
Spread the vanilla filling evenly over the chilled cookie crust and smooth the top.
Return the tart to the refrigerator while you prepare the watermelon topping.

3. Prepare the Fresh Watermelon Juice
Cut fresh watermelon into chunks and blend until smooth.
Strain the blended watermelon through a fine-mesh sieve to remove the pulp.
Measure 2 cups + 2 tablespoons (500 ml) of strained watermelon juice.
4. Make the Watermelon Topping
Pour the watermelon juice into a saucepan and add the powdered sugar.
Heat until the mixture just comes to a boil.
Meanwhile, place the gelatin in a small bowl and pour the cold water over it. Let it sit for about 5 minutes to bloom.
Remove the hot watermelon juice from the heat.
Add the bloomed gelatin and stir until the gelatin has completely dissolved.
Let the watermelon mixture cool. It should no longer be hot when you pour it over the cream layer, but don’t leave it so long that the gelatin begins to set.
Slowly and carefully pour the watermelon topping over the chilled vanilla filling.
Refrigerate the tart until completely set, preferably overnight.
5. Make the Chocolate Watermelon Seeds
Melt a small amount of dark chocolate in the microwave in short intervals or over a double boiler.
Allow it to cool slightly and thicken.
Transfer the chocolate to a small piping bag and cut a very small opening at the tip.
Pipe tiny drops resembling watermelon seeds onto a sheet of parchment paper.
Refrigerate until firm.
Carefully remove the chocolate seeds from the parchment and arrange them over the watermelon topping.

6. Serve
Once completely chilled and set, carefully remove the tart from the pan.
Decorate with the chocolate seeds and, if desired, a few fresh mint leaves.
Slice and serve well chilled.
Recipe Notes
Cookies:
Use your favorite plain cookies, graham crackers, digestive biscuits, or vanilla tea cookies. Choose a relatively neutral flavor so it doesn’t overpower the watermelon and vanilla layers.
Food coloring:
Gel food coloring works best because you only need a small amount and it won’t add unnecessary liquid to the crust.
Watermelon:
For the best flavor, use a sweet, ripe seedless watermelon. Make sure to strain the juice before measuring it.
Gelatin:
Always bloom powdered gelatin in cold water before adding it to the hot watermelon juice.
Cream filling:
For the best texture, make sure the heavy cream and milk are cold before mixing.
Chilling:
Although the tart can set in several hours, I recommend refrigerating it overnight for the cleanest slices.

FAQ
Can I make this watermelon tart ahead of time?
Yes. In fact, this is a great make-ahead dessert. Prepare it the day before serving and refrigerate overnight.
Does this tart taste like watermelon?
Yes. The top layer is made with fresh watermelon juice, so it has a light and refreshing watermelon flavor.
Can I use bottled watermelon juice?
Fresh watermelon juice gives the best flavor. If you use bottled juice, choose one without added flavors and preferably without added sugar.
Can I make it without green food coloring?
Absolutely. The food coloring is only used to create the watermelon-rind appearance and doesn’t affect the flavor.
How should I store it?
Keep the tart covered in the refrigerator. For the best texture and appearance, I would serve it within 2–3 days.
Can I freeze it?
I wouldn’t recommend freezing this tart. The gelatin watermelon layer and cream filling can change texture after thawing.
