Ingredients

Raspberry Filling

  • 14 oz raspberries (400 g)
  • ½ cup water, divided (120 ml)
  • ½ cup granulated sugar (120 g)
  • 1 packet vanilla sugar (or 1 tsp vanilla extract)
  • 2 tbsp cornstarch (15 g)
  • 1 packet vanilla pudding powder (European style) (about 1.3 oz / 37 g)
  • 5 tbsp unsalted butter (75 g)

Poppy Seed Filling

  • ¾ cup milk (220 ml)
  • ¾ cup + 2 tbsp granulated sugar (180 g)
  • 1 packet vanilla sugar (or 1 tsp vanilla extract)
  • 2 cups ground poppy seeds (200 g)
  • ½ cup finely ground tea biscuits (50 g)
  • 5 tbsp unsalted butter (70 g)

Chocolate Glaze

  • 5.3 oz dark chocolate (150 g)
  • 2 tbsp oil
  • 0.7 oz white chocolate (20 g)
  • ½ tsp oil

Additional

  • 1 package Rozen pastry sheets (thin crispy pastry layers popular in Balkan desserts)

Instructions

Make the Raspberry Filling

Place the raspberries in a saucepan. Add half of the water (¼ cup / 60 ml), sugar, and vanilla sugar. Cook over medium heat for about 7–8 minutes.

Blend the raspberries with an immersion blender until smooth.

In a small bowl, whisk together the remaining water, cornstarch, and vanilla pudding mix. Pour into the raspberry mixture and cook until thickened.

Remove from heat, cover with plastic wrap directly touching the surface, and let cool to room temperature.

Beat the butter until creamy, then mix in the cooled raspberry filling. Divide into 3 equal portions.


Make the Poppy Seed Filling

In a saucepan, combine milk, sugar, and vanilla sugar. Bring to a boil.

Reduce heat, add the ground poppy seeds, and cook for a few minutes while stirring constantly.

Add the ground biscuits and butter, stirring until smooth and combined. Divide into 4 equal portions.

Assemble the Cake

Place the first Rozen layer onto a tray or serving platter and spread with one portion of the warm poppy seed filling.

Top with the second layer and spread with raspberry filling.

Continue layering until all layers and fillings are used.

Leave the final top layer plain. Cover with plastic wrap or a clean plastic bag, then gently press with a light tray or cutting board.

Refrigerate for at least 3–4 hours, preferably overnight.


Make the Glaze

Melt the dark chocolate with 2 tablespoons oil. Separately melt the white chocolate with ½ teaspoon oil.

Spread the dark chocolate glaze over the cake first, then pipe thin white chocolate lines across the surface.

Using a toothpick, drag through the white lines in alternating directions to create a decorative pattern.

Return the cake to the refrigerator until fully set.

Cut into small bars approximately ¾ × 1¾ inches (2 × 4.5 cm).
