- 7 tablespoons unsalted butter, softened (100 g)
- 2/3 cup powdered sugar (75 g)
- 2 tablespoons unsweetened cocoa powder (10 g)
- 1/3 cup orange soda, such as Fanta (100 ml)
Dark Chocolate Mousse
- 4.5 oz dark chocolate, finely chopped (125 g)
- 1/3 cup milk (70 ml)
- 1 teaspoon powdered gelatin
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream (250 ml)
White Chocolate Mousse
- 5.5 oz white chocolate, finely chopped (160 g)
- 1/3 cup milk (70 ml)
- 2 teaspoons powdered gelatin
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream (250 ml)
Instructions
Prepare the Crust
In a mixing bowl, beat together the butter, powdered sugar, and cocoa powder until smooth.
Add the cookie crumbs and ground hazelnuts and mix until combined.
Pour in the orange soda and stir until the mixture comes together.
Press the mixture firmly into the bottom of an 8.5-inch (22 cm) springform pan lined with acetate or parchment strips.
Smooth the surface and set aside.
Prepare the Gelatin
Place the gelatin in a small bowl and add 3 tablespoons cold water.
Allow it to bloom for several minutes.

Whip the Cream
Whip the heavy cream on low speed until slightly thickened but still pourable.
Do not whip to stiff peaks.
Divide the whipped cream equally between the dark chocolate mousse and white chocolate mousse.
Make the Dark Chocolate Mousse
Combine the dark chocolate and milk in a heatproof bowl.
Melt gently over a double boiler or in the microwave until smooth.
Add one-third of the bloomed gelatin and stir until fully dissolved.
Mix in the vanilla extract.
Fold in half of the lightly whipped cream.
The mixture should remain smooth and slightly fluid.

Make the White Chocolate Mousse
Melt the white chocolate and milk until smooth.
Add the remaining gelatin and stir until dissolved.
Mix in the vanilla extract.
Fold in the remaining whipped cream until smooth and silky.
Create the Zebra Pattern
Pour 2 tablespoons of dark chocolate mousse into the center of the crust.
Directly on top of it, pour 2 tablespoons of white chocolate mousse.
Continue alternating the two mousses, always pouring directly into the center, until both mixtures are used.
The layers will naturally spread outward and create rings.
To create the zebra design, use a toothpick and draw lines from the edge toward the center, then from the center back toward the edge.
For the clearest demonstration, watch the video tutorial.
Chill
Refrigerate the cake for at least 4 hours, preferably overnight.
Once fully set, carefully remove the springform ring and acetate strip.
Slice and serve well chilled.
