Ingredients

For the Dough

  • 1 cup warm milk (250 ml)
  • 1 oz fresh yeast (30 g) or 2 1/4 tsp active dry yeast
  • 2 teaspoons sugar
  • 2 eggs
  • 3 1/2 tablespoons oil (50 ml)
  • 1 1/2 teaspoons salt
  • About 5 cups all-purpose flour (600 g)

For the Filling

  • 2/3 cup sour cream (150 g)
  • A little ketchup or pizza sauce
  • 5 oz finely chopped ham (150 g)
  • 2 cups shredded cheese (200 g) — mozzarella, gouda, or pizza blend
  • Dried oregano, to taste

For Brushing & Topping

  • 1 egg yolk
  • 1 tablespoon milk
  • Sesame seeds
  • 7 tablespoons butter, divided (100 g)

Instructions

1. Activate the Yeast

In a bowl, combine the crumbled fresh yeast and sugar. Pour in the warm milk and add a small amount of flour. Stir gently and let sit for about 5 minutes until foamy.


2. Make the Dough

Add 1 whole egg and 1 egg white, oil, and salt. Gradually add the flour and knead until a soft dough forms.

Transfer the dough to a lightly oiled bowl, cover with plastic wrap or a kitchen towel, and let rise for 30–45 minutes, or until doubled in size.


3. Shape the Pizza Rolls

Divide the risen dough into 3 equal portions.

Roll out each portion on a lightly floured surface.

Spread sour cream over the dough first, then lightly spread ketchup or pizza sauce on top.

Add the chopped ham, shredded cheese, and oregano.

Roll the dough tightly from the longer side into a log, then cut into 6 rolls.

4. Arrange in the Pan

Grease a baking sheet or baking pan with half of the butter.

Arrange the pizza rolls in the pan.

Repeat with the remaining dough portions.


5. Brush & Top

Mix the egg yolk with 1 tablespoon milk and brush each pizza roll.

Sprinkle with sesame seeds and add small pieces of butter on top of each roll.


6. Bake

Bake in a preheated oven at 400°F (200°C) for about 20 minutes, or until beautifully golden brown.
