- 1 teaspoon vanilla extract
Blueberry Chia Jam
- 2 cups blueberries (300 g)
- 3 tablespoons agave syrup (50 g)
- 1 tablespoon lemon juice
- 1/2 teaspoon lemon zest
- 3 tablespoons chia seeds (25 g)
Instructions
1. Prepare the Pan
Preheat the oven to 350°F (180°C).
Line an 8×8-inch (20×20 cm) baking pan with parchment paper.
2. Make the Oat Crust
In a large bowl, combine the oat flour, rolled oats, agave syrup, melted coconut oil, salt, and vanilla extract.
Mix first with a spatula, then with your hands until crumbly and evenly combined.
Set aside about 1/2 cup (80 g) of the mixture and place it in the freezer while preparing the filling.
Press the remaining mixture firmly into the prepared baking pan.

3. Make the Blueberry Chia Jam
In a saucepan, combine the blueberries, agave syrup, lemon juice, lemon zest, and chia seeds.
Cook for 1–2 minutes, then gently mash the blueberries with a fork or potato masher.
Continue cooking for another 2 minutes, stirring constantly so the jam doesn’t burn.
Spread the blueberry filling evenly over the crust.
Remove the reserved crumble mixture from the freezer and crumble it over the top.

4. Bake
Bake for about 35 minutes, or until golden brown and crispy on top.
Remove from the oven and let cool in the pan for 10 minutes.
Transfer to a cooling rack and allow the bars to cool completely before slicing into 16 squares.
